Cowboy caviar turkey roll ups have changed my life. Reality has set in that it's the start of a new year and I need to eat a litttle less butter and sugar 😂 cowboy caviar turkey roll ups have made it SO much easier. It's hearty but healthy, colorful, refreshing with a little kick of heat. Cowboy Caviar also known as Texas Caviar is typically treated as a dip for chips (which is also incredible), but it is so much more than just a dip to me now. My all time favorite/feel good foods are healthy foods in disguise and these wraps are definitely on that list. I feel like I have discovered guacamole's twin, and it was a total accident.
I recently filmed a tutorial video with my sister (Steph) making homemade snickers with dates and toward the end of filming we started to get a little hangry (so hungry you're angry haha). The contents of Steph's fridge were tortillas, turkey, and leftover cowboy caviar, so we put those things together and WOW.
HOW TO MAKE COWBOY CAVIAR TURKEY ROLL UPS:

Cowboy Caviar + Turkey Wraps
Dice & chop; red pepper, red onion, jalapeño and cilantro. Add ingredients to one mixing bowl.
Run canned black beans and corn through a strainer and rinse them then add them to the mixing bowl.
Add lemon juice, olive olive oil, garlic powder and salt flakes stir into mixing bowl, taste to see if more salt is needed.
Heat tortillas and add a couple slices of turkey to each tortilla. Add cowboy caviar to turkey roll ups and serve!
