TWENTY THREE DAYS. In 23 days 17 hours and 39 minutes I leave for my honeymoon! Which means there is a 23 day countdown of nutritious recipes to get this girl feeling a little more "beach friendly". I realize you're probably wondering why I am saying this directly under a piece of giant gooey melted chocolate, or worse, why I'm starting off my "nutritious honeymoon countdown" with it. Let me explain, in any attempt to be healthy I require a treat (funny that I made that singular) that won't make me fat. That way, when I inevitably have a sweet tooth I have a chocolatey friend to turn to. This is my friend, Healthy homemade snickers (chocolate stuffed dates)/ Chocolate Covered Snicker Dates.
I am a huge skeptic of healthy foods "duping" a favorite candy. I understand if you're hesitant to believe that these chocolate covered dates actually taste like a snickers. I know I was when I first heard about this recipe from vlogger Franceska Boerman, who heard it from Sam Ozkural, who found it on Instagram. I decided to give it a try with the anticipation that it would be a good (healthy) dessert, but would not taste like a Snickers. I WAS WRONG! Somehow, some way, these dates taste like Snickers. Have you ever made something that turned out so good you have to call your mom and friends to tell them about it? That happened.
How to make Healthy Homemade Snickers (Chocolate Stuffed Dates)
These homemade snickers are so much healthier than the real thing. Medjool dates stuffed with homemade crunchy peanut butter, coated with chocolate and topped with chopped peanuts. Start by cutting your date lengthwise, removing the pit and stuffing with peanut butter. I feel a little weird saying this, but I actually prefer these to actual Snickers. Which is a HUGE statement because Snickers are in the top two for favorite candy...
Melt your chocolate (make sure your chocolate contains no milk additives if you'd like these to be vegan friendly snickers) if you prefer a thinner viscosity add about half a teaspoon of coconut oil while melting to help loosen it. Once melted, drop in your stuffed date using a fork to roll and coat the date. Place on parchment paper to prevent chocolate from getting stuck and top with nuts of your choice (my favorite so far is chopped peanuts!).
Once you're finished dipping and have topped each date place pan in freezer until chocolate has set. *If you have added coconut oil to thin your chocolate it will begin to melt at room temperature - I keep mine in the fridge or freezer, both work nicely!
