These Hawaiian chicken tacos & pineapple salsa are made with the Huli Huli Hawaiian Chicken and Fried Rice recipe posted just before this one (click here for recipe)! One of my favorite ways to eat leftovers is to mix it up and add a little twist (aka turn everything into a taco). This pineapple salsa takes Hawaiian chicken tacos to the NEXT level and it's so easy to make.
How to make pineapple salsa:

- Pick a delicious and fresh (canned will work nicely too if you have it on hand!) pineapple, red pepper, jalapeño, red onion and lemon (or lime)
- Prepare equal amounts of each ingredient (juice: lemon and dice: red pepper, jalapeño, pineapple and red onion). For this recipe I used half of each ingredient plus half a teaspoon of sea salt flakes and half a tablespoon of olive oil (if you want to add a little heat, chili powder and pineapple is an amazing combo!).
- Combine all ingredients in a medium bowl. Adjust seasoning to taste.
The Perfect Corn Tortillas:
- Coat a large skillet with vegetable oil over high heat and give enough time for oil to heat up and get hot.
- Add tortillas to skillet and cook to desired golden brown.
- Using a taco rack or upside down muffin tin, position tortillas in U shape immediately after removing them from heat (*they will begin to harden as they cool).
- Heat up leftover chicken and huli huli Hawaiian sauce. From there, begin assembling your tacos!

Hawaiian Chicken Tacos with Pineapple Salsa
Ingredients
- 8 oz (leftover) huli huli Hawaiian chicken/ BBQ chicken
- ½ pineapple, diced
- ½ red pepper, diced
- ½ red onion, diced
- ½ jalapeño (or more for spice), diced with seeds removed
- ½ lemon, juiced
- ½ teaspoon sea salt flakes to taste*
- ½ tablespoon olive oil
- 6 corn tortillas
- vegetable oil
Instructions
- Prepare salsa ingredients DICE: red pepper, jalapeño, pineapple and red onion
- Combine salsa ingredients in a medium size mixing bowl then add juice from lemon and olive oil. Stir together
- Top with sea salt flakes, mix, then add more if needed. If you like spice, add chili powder.
- Coat a large skillet with vegetable oil over high heat and give enough time for oil to heat up and get hot.
- Add tortillas to skillet and cook to desired golden brown.
- Using a taco rack or upside down muffin tin position tortillas in U shape immediately after removing them from heat (*they will begin to harden as they cool).

This is a link to the huli huli marinade recipe that I used to make these tacos! 🙂 I'd recommend marinating uncooked chicken overnight, then cooking down the remaining marinade into a sauce. If you're working with a whole rotisserie chicken that has already been cooked though you can use the ingredients from the marinade to make a sauce for the chicken - just make sure you still cook it down and reduce it to get the same flavor 🙂
