    Instant Pot UN-stuffed Turkey Peppers

    NINE DAYS! Only 9 days, 16 hours until I leave for my honeymoon in Maui! As this countdown progresses so do the healthy recipes and sit-ups.?  This Instant Pot UN-stuffed turkey peppers recipe by no means NEEDS an Instant Pot to make it, I just love using mine! "UN-stuffing" the peppers was a fun (slightly lazy) spin on the traditional oven baked stuffed pepper. I love eating it this way and I think it's easier to make, so I'm making UN-stuffed the new tradition.

    How to make the BEST UN-stuffed Turkey Peppers:

    I start by adding a couple tablespoons of olive oil with half of a large diced white onion into the pot and turn on the sauté feature for about 15 minutes. I let the onions sauté on their own for a minute or two, and then add in the ground turkey and minced garlic cloves. Season with a bit of salt and pepper. Cook, stirring it often until turkey begins to turn brown, around 8-10 mins. Slice red and green bell peppers in long strips and add them to the pot. Next add in 1 cup of basmati rice, 15oz can of diced tomatoes, 8oz can of tomato sauce, 1 cup of chicken broth, and 3 tablespoons of Worcestershire sauce.

    Stir until things are evenly distributed then close the lid. Seal the pressure release valve and turn settings to "pressure cook" (on high) for 7 minutes. Once seven minutes is up leave the pressure release valve sealed,  it will start doing a natural release of pressure. Let it natural release for about 3 minutes, after that turn the valve to release the remaining pressure and open the lid. It's ready to eat!  I started prepping this recipe at 6:00 and it was in my mouth by 6:40! If you want to get a little crazy - add some shredded cheese on top!

    Instant Pot (or Large pot)

    Ingredients
      

    • 2 tablespoon Olive oil

    • 1 Red pepper (cut into strips)
    • 1 Green Pepper (cut into strips)
    • 1 cup Rice (I use Basmati)
    • 15oz can Diced tomato
    • 8oz can Tomato paste
    • 3 tablespoon Worcestershire sauce
    • 1 cup Chicken broth

    Instructions

      Maybe a dumb question, but do you use cooked or raw Basmati rice?
      This sounds like a great/quick alternative to the long process of stuffing peppers individually, same great flavors! 👍

      Family loved it! Very easy, with many of the ingredients being those that I always have on hand. Maybe the only change I might make is a little less on the can of tomato paste...but it was a pleaser all around and I will be making it again.
