If your picture of Fall doesn’t involve sweaters, big warm blankets, and some variation of hearty delicious chili. . . I’m not positive we can be friends ✋?. This healthy but hearty turkey chili is one of my favorite cozy comfort foods. It has enough spice to heat up your taste buds, but not enough to hurt their feelings (comfortably between mild and medium ?). OH, and it’s Instant Pot friendly.
INGREDIENTS TO MAKE HEALTHY TURKEY CHILI:
- Ground Turkey
- Black Beans
- Cannellini Beans
- Fresh Garlic
- White Onion
- Chicken Broth
- Water
- Carrot
- Jalapeño
- Whole Tomatoes that I squeeze by hand (I know what you're thinking, it's different than crushed tomatoes. I swear.), crushed tomatoes, and tomato paste (clearly I couldn't make a decision)
- Taco seasoning, chili powder, dried parsley, and crushed red pepper (there would also be cayenne pepper if I, in fact, hadn't just run out of cayenne pepper).
Chili is ingredient friendly and versatile, if you have celery, corn, different beans, peppers to mix in don't be shy! Add it in!
SPICE TIP* If you want a more mild chili remove the ribs and seeds of the jalapeño. The ribs and seeds of the jalapeño are what make it spicy!
COOKING YOUR TURKEY CHILI IN AN INSTANT POT:
Set your Instant Pot's setting to Sauté and begin with 2 tablespoons of olive oil over medium heat. Add a diced onion, carrot, minced garlic and jalapeño. Allow the onion, carrot, garlic and jalapeño to sauté for a minute or 2.
Then add in your ground turkey (or whatever protein you'd like). Cook until browned and continually stir to cook the protein evenly. Take whole tomatoes in a separate bowl and carefully (they explode lol) squeeze by hand (I know what you're thinking, but it's different than crushed tomatoes! I swear). Next, add the whole squeezed tomatoes, crushed tomatoes and tomato paste to your Instant Pot and stir. Follow that with chicken broth, water, taco seasoning, chili powder, dried parsley, and crushed red pepper (also cayenne if you have some). Switch Instant Pot settings to Bean | Chili, add beans then close the lid and cook for 20 minutes. I released the pressure manually, but doing a natural pressure release will work too. It’s ready! Now just add your favorite toppings!
FAVORITE CHILI TOPPING IDEAS:
- Sour Cream
- White Onion/Green Onion
- Monterey Jack, Cheddar or Queso Fresco
- Avocado
- . . . Bugles, Goldfish, Saltine crackers, or Fritos (pleazze no judging)
Enjoy!
