ONE POT, HOMESTYLE CHICKEN DUMPLING SOUP 

This One-Pot, Homestyle, Chicken Dumpling Soup exemplifies soup that is good for your soul.  It's a hearty bite of tender, pulled chicken, vegetables, and dumplings, with a comforting essence of rosemary and thyme. 

Melt butter in a large pot over medium heat with olive oil. Add chicken, season with sea salt flakes and pepper.

Season with a little thyme then flip chicken to sear both sides.

Remove chicken and set it aside to rest.

Add celery, carrot, onion, chicken base and butter to your seasoned pot.

Mix all the ingredients together and add fresh minced garlic.

Add flour and continue stirring to make the mirepoix for the base of your soup.

Add water, thyme, rosemary, and bay leaves. Stir again, then cover and let it simmer for 1 hour.

After the soup has simmered for an hour, remove the cover, stir, and gently add the whole pieces of cooked chicken and diced potatoes into the soup. Add flour, eggs, melted butter, baking powder, and sea salt flakes to a separate bowl.

Mix ingredients and knead the dough. Set dough aside, no need to shape the dumplings ahead of time.

Remove the bay leaves and chicken from the pot, immediately shred it on a plate, pulling it into bite-sized portions.

Once the chicken is shredded, then add it back to the soup pot and stir in cream.

Break off small pieces of dumpling dough and drop it into the soup. Dumplings puff-up and float to the surface when they're ready.

Feel free to garnish with a little parsley (or don't-it's delicious either way). ENJOY!
