Greek Spinach & Feta Pie

This cheesy, flaky Spanakopita Greek Spinach and Feta Pie is crispy, buttery, phyllo & delicious creamy spinach pie with cheese

Squeeze chopped spinach until  you've wrung out all the water.  Finely chop the green  onion and dill.

Mix greens then and drizzle with olive oil.

Mix eggs, cream cheese, cottage cheese, kefalotyri, sea salt flakes, celery salt, & dried mint in your stand mixer.

Add in the feta on the lowest speed setting.

Slowly incorporate your greens.

Lay out the first layer phyllo dough. Brush with melted butter. Grab another layer of phyllo and butter it, then  repeat one more time.

Gently scoop spinach and feta filling over the buttered phyllo. Evenly distribute it.

Add another layer of phyllo and  brush with butter, After sheets are well coated, add another layer of phyllo, and butter.

Add the layer of phyllo sheets and butter. Brush  butter on all of the edges of the phyllo and cut each corner  GENTLY  roll up the edges of phyllo around the border of the baking sheet.

Brush  melted butter over the rolled edges. Score the phyllo to pre-cut it (it's harder to cut when it's crispy) then bake.

Bake until the top layer of phyllo turns  golden brown.
