These homemade healthy snickers are so much better than the real thing. Medjool dates stuffed with crunchy peanut butter, coated with chocolate and topped with peanuts.
Start by cutting your date lengthwise, remove the pit and stuff date with about half a tablespoon of peanut butter
Melt your chocolate (make sure your chocolate contains no milk additives if you’d like these to be vegan friendly snickers) if you prefer a thinner viscosity add about half a teaspoon of coconut oil while melting to help loosen it.
Once melted, drop in your stuffed date using a fork to roll and coat the date.
Place on parchment paper to prevent chocolate sticking
Before chocolate begins to set top with nuts of your choice (my favorite so far is chopped peanuts!).
Place pan in freezer until chocolate has set.
*If you have added coconut oil to thin your chocolate it will begin to melt at room temperature – I keep mine in the fridge or freezer, both work nicely!
