Instant Pot UN-stuffed Turkey Peppers are healthy, easy, and DELICIOUS. They're the perfect spin on stuffed peppers and a perfect weeknight dinner!

  • Turn on Instant Pot using sauté setting with timer set to around 15 minutes
  • Add about 2 tablespoons of olive oil and half of a large diced white onion into the pot
  • Stir and let onions sauté for a minute or two - then add in the ground turkey and minced garlic cloves
  • Season with salt and pepper.
  • Cook, stirring it often until turkey begins to turn brown, around 8-10 mins.
  • Slice red and green bell peppers in long strips and add them to the pot.
  • Next add in 1 cup of basmati rice, 15oz can of diced tomatoes, 8oz can of tomato sauce, 1 cup of chicken broth, and 3 tablespoons of Worcestershire sauce.
  • Stir until things are evenly distributed then close the lid. Seal the pressure release valve and turn settings to "pressure cook" (on high) for 7 minutes.
  • Once seven minutes is up leave the pressure release valve sealed,  it will start doing a natural release of pressure. Let it natural release for about 3 minutes, after that turn the valve to release the remaining pressure and open the lid.
  • It's ready to eat! If you want to get a little crazy add some shredded cheese on top!
