  • Preheat oven to 350°F and spray a nonstick bundt pan (or donut pans) with cooking spray.
  • Whisk together flour, sugar, vanilla instant pudding mix (powder), baking soda, & sea salt flakes - set aside.
  • Combine ripe bananas, eggs, canola oil, coconut oil, and vanilla extract in your stand mixer bowl
  • On low speed slowly add the flour mixture, until the batter is smooth.
  • Stir in dark chocolate chunks.
  • Pour batter into prepared baking pan and bake at 350°F, until a toothpick comes out without batter (about 40 minutes with convection on for large bundt cake and 15 for donut molds). Let it cool in pan for 10 minutes, then turn it out on rack to cool completely.

Notes

*I use Maldon Sea Salt Flakes in this recipe; it makes a big difference in the flavor. The amount needed for the recipe wouldn’t be the same with regular table salt (it’s about half!), but I DEFINITELY recommend using sea salt flakes!
